This is coming from a biased perspective though, I'm not a fan of escalation contracts, I like freedom with my assassinations.
When I don't want to do the campaign contracts, I sometimes dabble in playermade contracts.

i dont even see an option to play Silent Assassin?
when i click on game mode...silent assassin..i get the choice of 3 different maps...not Paris?
- Only eliminate the target(s)
- Prevent non-target deaths
- Do not get spotted
- Have no witnesses
- Have no bodies found
- Do not get caught on camera
In the game's HUD options, you can activate an icon that alerts you in real-time if you meet the requirements of Silent Assassin. That icon has 3 colors:
Green: Silent Assassin
Yellow; Silent Assassin but the cameras detected you meaning that, if you destroy the evidence, you can get the green icon again
Red; A requirement was broken and the only way to get the green icon back is by loading the game or restarting the level
Then Suit Only is by completing a mission without changing your starting suit and, if you want to get it, Silent Assassin Suit Only is by combining the requirements of both in a single run.
EDIT: The game mode you saw in the menu in which there are 3 missions is not Silent Assassin, it is called Sniper Assassin.
Personally I recommend just playing through the levels, play around a little bit, explore, and you'll find out what routes and such the NPC's of interest usually take.
Some challenges gets a lot easier once you get certain unlocks, such as lethal poison vial, or lethal poison syringes, and then of course the obvious; lockpick, but not limited to.
Have a look at the mastery levels for each map, and the challenges, you can unlock a lot of cool stuff that will make it easier, plus some really neat suits, briefcases, etc.

so now after doing some silent Assassin challenges and stumbling on a few other challenges i am at 11/20 Paris
i see under challenges -classics there are silent assassin challenges that say complete 5, 12 and 17 challenges
i have 2/5,2/12 and 2/17
not sure how i got 2?
does this mean i do a regular challenge fulfilling all of the requirements of a silent assassin challenge?
The sniper challenge in my opinion have some good unlocks too, I just really like the leather suitcase.
For example in Paris I disguised myself as Helmut, set the meeting up with Dalia, saved, spiked her drink with rat poison and drowned her, reloaded, lethal poisoned her drink, reloaded, stuck the usb in her laptop and snapped her neck, reloaded, set off the fireworks and threw her over the ledge onto Viktor, extracted and got all these challenges completed at once without needing to restart the mission.
The Hitman trilogy has tons of content, but if you cheeze your way through the challenges by reloading just for XP you can easily find yourself wondering "Now what?"
The "Classics" challenges require you to complete the associated challenges (Silent Assassin, Suit Only, SA/SO [that's both together in a single run] and sniper assassin) on that many different missions. This does not mean playing the same mission on the same level that many times, instead it means playing different maps or different missions on a map (There are maps that have different campaigns. In those campaigns the map will have some noticeable differences). An example would be "Showstopper" and "Holiday Hoarders" in Paris.
so the 5...12...17 classic challenges are not mission specific and are meant to accumulate over different missions

i finally hit Paris 20/20...
It took me replaying the Paris level easily 30-40 times..did all escalations...many stories and many challenges...etc..etc
i have to say that for me..this is just too many times to have to play the same mission over and over ...it just got boring after a dozen replays
i played it so many times that my vision was getting blurry and no longer 20/20(just a joke)
i shudder at the thought at having to hit 20 for the rest of the missions
so any tip or advice on how to count cut down on the number of replays is welcome news in my eyes
