Sometimes the minion will go for the last built chest, sometimes it goes for the furthest away, or the nearest. It seems to be truly random.
However, there are two semi work around strategies. The first is the chest linking upgrade, just open a chest and cycle through sorting stuff out.
The second option is stack splitting. This requires a lot of storage space and resources, but basically you make a box for every item and put at least one of that item in every slot. That way the only place the minion has to stash something is inside of a pre-sorted stack inside a chest.
Personally I've been doing 1-minion runs... fueling my bio-generators. Picking up the 'trash' from around the barricades gives me something to do while the crops grow and I don't have to worry about finding slime in my stockpile of seafood salad and blueberry milkshakes.
That is a way to do it, but you don't need to dedicate a chest. You can dedicate the slots that way. So a chest that is half and half or even a different item in each and every slot is completely possible.
But yes, you do need one resource per slot you want to secure for that resource with this way.
