You'll not be able to coop, but the game is completly playable (solo) without it.
This is to let people who bought the game on different stores to be able to play together.
You can uninstall the Epic Online Support without effect to anything at all except you will be unable to play with Epic players.
Edit launcher.ini, set NoOperation to 1. Save. Uninstall it if it got uninstalled.
Just go into your Windows Settings > Apps > Installed Apps > Look for "Epic Online Services" and click uninstall.
No it doesn't.
Disabling a flag in one of the launcher files prevents it from ever appearing again so again, a non issue for me going forward.
What would I gain about lying? Literally nothing
