Yeah, sounds like you didn't use a gridiron
Now, that is if you really know how it all works and are not making a simple mistake like a branch line comes in from one side and the the other side doesn't have enough switchable tracks to allow a train coming in on, say, tracks 7 and 8 to go out the other way and properly switch to get where you need it go.
In that case the stations where you want it to go will not show up as selections. I have taken to building 6 or 8 tracks coming out of every station with a switch across them all (gridiron).. take long straight-run leads to do that and the distances don't always work out. It is hella-costly but has been saving me time in re-configuring things later.
