Is it possible for a 2 line railway to extend into a full 8 lines station?
So I have a route where track utilisation is not that bad, but the station becomes super full, and is the bottleneck.

Is it possible to make it so that a 2 line railway extends into a full 8 lines station? So that multiple trains can load and unload at the same time.

Yes, but this will take a gridiron that is going to be quite large.

Or you can use two gridirons for four station tracks each (split you two track mainline somewhere outside the station; use waypoints to assign your lines to the desired station entrance). Or you can assign specific station tracks to your trains (on the screen where you enter the details for loading/unloading for each station).

I was curious about the different length of the 2 methods described above. I created a double 4 gridiron https://steamcommunity.com/sharedfiles/filedetails/?id=2986199540 out to 2 tracks.

I measured the different gridirons in the north american map set to miles.
2 track is ~3 mi
3 & 4 track is ~9 mi
5 & 6 track is ~13 mi
7 & 8 track is ~17 mi

What I created is about 12 mi from station to the single parallel track. I could have made it shorter but decided to maintain "Max" speed for the tracks between the gridirons and the single parallel tracks. If you wanted to distribute your trains across 8 platforms you would need to place at least 1 waypoint in each of the 2 entrance tracks.

The loan track above is about the length of an 8 track gridiron.

You can expand the width of a Station to 8 Tracks, UNLESS something else gets in the way that will not move out of the way, i.e. Industry Buildings and probably City buildings like Museums and Universities, etc. Other existing Stations in the City, your own or another Company's and the tracks that serve them, can interfere with the placement of New Stations and their tracks.

So when placing a Station make sure that all 8 possible tracks are available and not blocked by something. So that tracks can connect all 8 tracks in the Station to other Cities and Rural Stations.

Also try to avoid using really wide Gridirons with a lot of tracks. Try to keep them in the 2 to 4 track width range. The smaller the better. Do not use 8 track wide Gridirons, they will hurt you, not help you. You will get fewer trains through an 8 track wide Gridiron in the same period of time than you will with 4 side by side 2 track Gridirons, linking to 8 tracks in the Station.

Also you want to keep Freight and Express Trains COMPLETELY Separate on Station tracks and between Cities, by using dedicated doubletracks and Gridirons. Freight trains on the same tracks slow down the Express Trains and cost you a LOT of lost revenue from Passengers and Mail, where speed of delivery matters.

When you build a 2nd Station in a City, make one of them Pure Freight, and the other Station mostly or all Express. You might use one pair of Tracks in the Express Station (usually the outer most, i.e. tracks 7 and 8) to take some deliveries from Resource Stations that are on the wrong side of your main tracks to easily reach the pure Freight Station.
