Game Difficulty Setting
Which setting do you play on and do you notice any differences other than the enemies being even more of a bullet sponge?

Veteran. They hit harder, more of a bullet sponge for sure but i use mods to mitigate that with lowered repair costs, mutant loot and 25% reduction on mutant health. Unless you are playing like a knob, you should have no problem playing on lower difficulties. Stalker difficulty is pretty much ok for a person not having much experience in games like Stalker.
Never changed difficulty from start to finish in all my playthroughs.
Other than those i haven't noticed any significant changes to difficulty except reward system and selling prices are drastically lowered.
Also lowered stamina regen on Veteran is really bad.

Imo on stalker, humans die quick and some mutants are fairly spongy or get other mechanics to replicate it.

I play on easy, because who has the time? :) Enemies are pretty tanky if you shoot them center mass, but headshots are mostly one hit kills. Other than that, no real difference that I know of.

I went all the way through my first run on easy to get the story. Been taking the time to find the right mods to match my playstyle nicely for a Stalker run to do the other story paths.

I play vetaran most of the game, some specific battles I have to set to rookie cause they are just ridiculously unfair

Set it to Veteran and never looked back. I will admit though, I was tempted to lower the difficulty when I encountered a Chimera and it had me trapped at an elevated spot. The amount of ammo that had to be dumped into it was ridiculous.
