If you absolutely feel like playing in a sub-optimal way, there is a ramp on the way that you can climb and drop from while the sucker has to go around every time so you have plenty of time to shoot with whatever weapons you have. Shotgun is very good for it's high damage, use slugs when possible but 10-ish hits with buckshot will kill one too.
Early game, if you only have the Toz or broomstick is pretty tough.
Once you get the M860 Cracker it helps.
Once I got the Saiga, I found them one of the easier mutants.
If you simply keep dying cause bad guns, low on ammo, etc. You can ho to Options at any time and change the skill level to Rookie. If it seems bugged, either wait until death or simply reload a saved game after skill level change. Now Bloodsuckers are not as strong. Then change it back so you don't seem nearly invincible against NPC gun fights
But overall, the best defense is a good offense, so find a corridor or doorway to channel their approach, crouch to improve your main, and watch for the shimmer.
