So the GP37 has an in-built optical scope which one can use, but is it also possible to use the upper red-dot scope? Im asking because a) its already on the model and b) would allow one to switch between a 200m adjusted scope and one for 100m which would be quite neat in 1 weapon to have, especially given that theres nothing remarkable otherwise on the weapon in terms of damage, modifications or unique variants.

I only tinkered with it once - but there is an upgrade which removes the internal scope and lets you attach other optics. That's irreversible though - so you might want to have one in reserve if you want to switch back to the internal optics later...

So far I've not seen different "zoom modes" - so I'd say it's only one zoom per optics.
