will I be able to play this?
cpu - r5 5600
gpu - rtx 4060
ram - 32gb 3200mhz
ssd - kingston fury 2tb

I bought 5600 instead of 5600x because I was tight on budget and I hope I did not make the worst mistake just for saving 15 EURs.

No one knows for sure, the 4060 is kind of anemic for what it is, but I reckon you should atleast be fine hitting 60fps on low settings at the bare minimum.

It's a could be worse, could be better rig but I think you should be able to get a playable experience unless they've severely butchered the optimization like most other games do these days

The 4060 is more capable than the recommended Nvidia GPU but, yeah, we don't know what those recommended requirements are for so it could be for "high", 1080p but at 30fps.

I think you should be able to play this game on high settings 1080p with 60fps.

if I can play medium 1080p with atleast 40 to 50 fps I will be fine with that but I understand games these days have poor optimization, but we are not talking here about a company which releases one game every year so I have my hopes up.

4060 is better than 1080 Ti but it has 8GB ... 4060 Ti was too expensive for an upgrade, I could have bought that one but I would still have my old Ryzen 5 2600 and I dont want to buy a whole PC.

1080p for sure.
Save up some money and try to get a used 5800x3d if you can get one from Ebay, a new one is almost impossible to get for a reasonable price. Or get a slightly weaker 5700x3d which are widely available today.
Your gpu and ram are absolutely fine for 1080p in the coming few years, your CPU is the bottleneck which can be fixed with another AM4 update before you hit the socket wall.

I just sold my old 2600 and bought a new 5600 why would I sell my brand new cpu to buy an USED cpu which can have defects and also consumes more and heat more, I am grateful with what I have.

Just merely a recommendation, It's a future proof update for your aging AM4 socket. If you just recently bought your 5600 another upgrade would be wasted money, but you should keep that in mind if you struggle in the coming 2 years with newer UE5 releases. The 5700x3d will be the best in slot for the AM4 with market availability in the next few years. The 5800x3d is out of stock or only available on reseller markets these days.
