Which version do you recommend buying and why?
I'm thinking of buying the latest version for the expansions or DLC.
But I see that unlike deluxe it only comes with the DLC and I don't think the DLC will come out as soon as the game comes out.
I don't know if buying the deluxe or the ultimate helps.

Ultimate version does include all the Deluxe version content too.

What's the point of an ultimate version otherwise.

You are the best one to know what suits you best, however be advised that buying the ultimate version will likely be cheaper than buying the DLCs separately. So if you are sure enough to get them after their releases, it could be a good deal to buy everything at once.

I'll save up for the latest version. I love Stalker and when it came out Anomaly I didn't stop playing it. I'll take advantage of it. I just hope to buy it before it comes out.

Speaking of digital edition? I wouldn't bother anything else than standard version. Physical edition is a different story.
