The best one would be 3 for me. 4 is a good game but not as good as 3.
D2 is also good but the age is showing, if you can live with that go for it. The big advantage is that the orcs, undead and demons are not united under his evilness so you have to play them individualy.
The 3rd is the start of the current story, with Tayla being the Chaotic Evil's general.
The 4th is more of 3, with refined mechanics.
If you are just starting in, I suggest starting with 3. Then its DLC. Then 4, and its DLC. Finally, 2 if you really want some more.

My personal favourite was Dungeons 3 because I really liked the thing with progressing through a map that gets evilfied after we destroy it. Dungeons 4 doesn't have that map unfortunately.
Gameplay wise i like 4 the most, there is much QoL by building your dungeon.
from the Story i would say 2 or 3, they are real close together and got some nice twists here and there.
from the visuals i like Dungeons 1 the most, it fellt a bit more gritty and was not so colorfull.

I played 2 +DLC and loved it. The Undead DLC was 10/10 for me but im bias and love the undead. Im waiting until payday then ill get #3 for the hot, succulent, jiggly.. uhh..gameplay.
