Gameplay - Easy v Realism, swapping and parked planes

What is the difference between Easy and Realism - is it just the cost/revenue margins or any other gameplay differences?

I am on Easy setting and note that I buy a plane and assign it to a route. If I want it to fly a different route, I have to reroute and create a new route, there is a fee for creating the route and the old route no longer exists. Can it be so that the old route remains and a grounded aircraft can be set to parked then reassigned to a previously created route?

In real world, for most airlines, a plane will fly multiple routes and for large airlines many planes can be parked. Is the gamplay possible to have a pool of aircraft and a pool of routes, and assign aircraft to the routes?
