I did the same. I love Crystal Project, but Salmon Run and Quintar racing were not for me.
Less jumping more.. TIMED jumping. If you TIME things right too you can hop on the backs of the fish and push yourself even further.
And the biggest momentum loss is hitting an object, wall, or fish. Don't get stuck behind the fish, don't spam ascent, and do not hit the back of a waterfall. You should be timed to gain momentum from a fish or exiting the water in order to hit the top of the waterfalls to get an even bigger speed boost.
It's not unreasonable at all to just not jump into waterfalls: just swim into the base then upwards.
