You can cook them on their own. Its a good way to fill up your self-serve stands in-between rounds without using your meat. You can pet the kitty and it'll go get a new rat as long as you've already served the last one it gave you.
When do you use the sink? I'm on mission 8 and I've never seen a single instance where the trays get drity.
They don't necessarily get dirty, rather, you can put an incorrect combination of ingredients on one which makes it unusable.
You can either clear it in the sink or put it in the oven which results in an (X) notification. The sink is faster.
