Is there a point to unlocking the greenhouse?

Customers don't seem to order anything you haven't unlocked. So why not keep it simple with pure meat dishes?

Unless it eventually progresses to require more complex dishes whether you've unlocked the crops or not?

Technically, you're not required to unlock any recipe. You can simply go through the game with meat pies and patties (those start as unlocked). But the more complex the dish the table orders, the bigger the profit. So both the greenhouse and the additional ways to process meat pays for itself rather swiftly.

If you want to progress in the story you will arrive at a point where you need to get vegetables to progress. Vegetables also unlock recipes that are worth more money.

If i remember right i unlocked the greenhouse after buying the tomato on the upgrade menu

You can cook them on their own. Its a good way to fill up your self-serve stands in-between rounds without using your meat. You can pet the kitty and it'll go get a new rat as long as you've already served the last one it gave you.

When do you use the sink? I'm on mission 8 and I've never seen a single instance where the trays get drity.

They don't necessarily get dirty, rather, you can put an incorrect combination of ingredients on one which makes it unusable.

You can either clear it in the sink or put it in the oven which results in an (X) notification. The sink is faster.
