It was planned to be pulled from the start, as part of a special Steam-demo-week sort of thing that a bunch of upcoming games were part of.
The only reasons, from a dev's perspective, to remove the demo is if it's totally broken, or if it would lower your sales by showing how bad or empty the game is.
One of the issues is that some people are having a hard time playing the game even with the small content the Demo had to offer. This is understandable as this game offers some complex mechanics. Accessibility will be addressed before and during Early Access.
PS should not roll out a demo if Developers could not handle it and most other game do not have any problems and demo remain for much longer period most forever.
