If you don't want to play until it's done probably best to waitlist, although if there's dozens of hours of content in the game atm if you like playing through differently and picking different options.
However, they made enough money from Slay the Princess to fund the rest of Scarlet Hollow and are now working on it full-time, so while I'm not sure about the when I'm confident that bar some horrible tragedy it will be finished eventually.
Bought it in a bundle with STP, but I won't start it until the full game is released. I can't imagine having to wait years between episodes and wondering what happens next. It'll take as long as it takes, but I'm sure it'll be worth it in the end.
