Anyway to make the canvas really big and vertical?

As far as I can tell so far you can only make it wider and taller at the same time and not individually.

I'm planning to do a really really big painting but focused on vertical but the biggest size is more focused on horizontal.

You can freely change the aspect ratio when you're creating a new canvas. The aspect ratio is locked once a canvas is created. So yes, you can have a very tall portrait canvas!
