They are not fighting over "spices."
They substance is literally called spice.
What would you call it instead? Dune: Space Mushroom Wars?
The straws at which the trolls grasp to enforce drama are amazing.
Its basically a Medieval Crusader Setting gone Sci Fi. They are exploiting the desert for the Dune variant of Opium, to transport it back to their empire.
So its pretty much the colonial age and the "Houses" are basically your variants of England, Spain, Portugal, France, Germany etc. just more medieval.
And on top, come some worms and the "free men" (the desert natives, pick your equivalent people of the crusader era in the middle east) being exploited and riding their camels - i mean worms.
Thats it.
Spice enables safe faster-than-light travel and so allows the entire interstellar human community to function in the first place. Opium is at most a painkiller and at worst can ruin the health of an entire nation.
Also, none of the noble Houses resemble any nations in particular. They resemble...noble families as they have functioned in human feudal societies throughout time.
Also, the last bit just shows your hand, you are just another fascist troll who wants to force drama where there is none.
Sod off.
There, I hope that explains why....
I like Dune, but lets not pretend its more it really is. And the one being dramatic about that, is you.
