Dew traps, I'd say. And, being Atreides, it's really, really easy to ally to the Fremen. Which gets you windtraps.
Other then that, do what you do with every other resource. Use any villages bonuses that apply to boost it when/if you can. If not, even a wind starved map is more then capable of 'enough' water with a dew trap in each village.
