I've thought of this idea myself as well, even if it might take a few tries to mutate the blood (just like prisoners don't always mutate)
To go from having to lose a prisoner to mutation to have "easy access" to the blood to chugging a "potion" is - why wasn't it that easy to begin with.
Honestly I feel like mutant blood is "flavourful" the way it is...it's kind of like a resident evil experiment affair, and "the wild card" of it is interesting, the "summons" you get by killing by bites fighting your enemies, the "bio-hazard chaos" of it all..but at the same time it's not a super all around good blood to lose one's mind that you don't have easy access to it.
Reducing it to the "drink up" scenario takes away a lot...just imo.
But they did make creature blood so accessible now that you even get a double bonus of a worker blood with it...so who knows maybe lol.
