The game encourages you to find the merciless gear before advancing to the next tier.
If it's normal and you're good and know the game, you can do it without.
If it's brutal, you can't even like that.
So, yes, just go find paper until you make a full set and at least one weapon. Against Nicholaus, I recommend you use the Ghost spell Spear+ Poison skill skulls. As for the weapon, the bow or mace are best bets(Though I personally recommend the bow).
The spear goes through all the enemies, and everyone it hits it grants you a stack of Phantasm, which can reset the cooldown of one of your spells. Then, since NIcholaus just runs and stands around a lot, spam skeleton skulls at him while you clean the skeletons he summons and make distance from them with your bow Q. The skeletons you summon will poke and follow him, besides baiting him to use his explosion attacks against them, making you mostly safe for the whole of the fight.
Like with Quincy he loves his spinning attack, which you can avoid by putting a wall between you and him and getting back into the Arena before he resets. Meanwhile all the projectiles he shoots out can be absorbed with a Shield spell.
With this game you really want to only use your dodge for unavoidable big damage moments, which definitely takes some getting used to as most games allow you spam dodge. This game is about learning how to dodge incoming damage without having to rely on your dodge ability, whether that be with Shield Spells, Counter Spells or just basic movement.
When first learning a tough boss just put on some defensive spells like a Counter and a Shield and learn how to negate/avoid all the bosses attacks, don't worry about dpsing when learning. You'll know the openings once you know how to avoid all the incoming damage.
I assume you don't have access to a Prisoner to bleed for blood yet also, so try to get a good high % blood before going into the boss fight as it really helps.
Once you get Quincy down you'll have access to Iron Weapons and most of the early Act 2 bosses can be cheesed in one way or another if you're having problems with them.
This is also a good source of copper coins, which you can spend at the shady merchants to buy the other books you need for your armor set, as well as the strength and magic power potions, which can help you beat the bosses.
I circle around him + the area. The skeletons he summons follow in a large group. This allows me to shoot a few ranged spells at him occasionally. I prefer Unholy for the Skeletons it summons, which can also be used against the skeleton group as a distraction.
Sword is the main weapon I use. "Q" Whirlwind ability allows you to move through enemies, so getting surrounded isn't as much of an issue. Long Bow is also good if you can get a shot off.
I don't bother killing the skeletons he summons. He'll summon more to replace the dead ones. However, they are slow and will stop to attack the decoy you leave when you dodge.
Edit to add. Just a general gameplay tip but you can use your weapon skills as extra dodges, I tend to use Mace Q as it offers really good movement but sadly no I frames. Greatsword, pistols, slashers and I think Axes all have a dash with I frames.

For future bosses you may get stuck on: some are easier if you fight from horseback.
What worked for me at the end was going for a spellcaster build (full warlock armor set), the ring that gives movement speed (since you need to be faster to walk away from his attacks) and using shadowbolt and chaos volley.
For extra damage inbetween I was using a merciless copper longbow.
I also got lucky and found a 90%+ creature earlier for some extra movement speed.
I essentially only focused on walking out of his target line when he was doing attacks and otherwise spamming the 2 spells + the Q attack of my bow whenever I could.
Evading with space only for the big attacks or when it got close.
Ended up beating him and only getting hit a few times.
If you have the merciless crossbow, youre already set. Just work on dodging and then spam the q+e and take shots when you can.
My load out is spell load out is almost always: Chaos Magic - Chaos Volley. Unholy Magic - Corrupted Skull. for Ultimate it is Unholy Magic - Army of the Dead. Those 3 havent let me down once. The Corrupted skull is MAJORLY important imo. It gives you some dudes that the enemy will focus on instead of you to give you some breathing room.
Also, HEALING POTIONS.
I started using them WAY later than i should have. I def regret that. Especially when you use skeleton summons, you end up with a lot of chances to use them.
Make sure your armor i the highest tier you can craft and always prioritizes upgrading your armor. Then take like 2-3 weapons you like using. The Crossbow has done absolutely wonders for me since I picked it up. I like it better then the bow. Now I am using pistols and jeebuz. They are really good.
And last but not least. You DO NOT have to kill them in order. I literally just killed Octavian in act 2, But i already started going into act 3 areas of the map and even had killed Ziva already. Some bosses are much easier than others. You can always skip harder ones and do easier ones (and by that i mean abilities they use. Even higher levels can be easier than lower ones based on attacks). Just make sure to check out what they unlock and see if you could maybe push ahead in like armor or something with a cheeky later unlock
