Mutant and Creature Blood
Is there a way to imprison a unit with those blood types or are they all just "drunken on the spot" and not produceable?

I don't know about mutant but you can capture a werewolf for worker/ creature blood at day/night respectively.

Wait, we can keep them in cage? I thought the werewolfs broke out when they transform.

You can only capture them in their Human form, and they do transform at night. But unlike mutants they don't turn aggressive in prison,so yes you can keep them in the Prison and take Creature blood from them.

Okay. But the chance of finding one is extremely rare right? And if you find them as werewolve... Do you follow htem until they transform then imprison them?

As far as i know,no. You can't keep Mutants at all.

There is a village at the edge of the forest full of werewolves, just pop in during the day to kill all the workers until a high blood level pops. Before Gloom patch the werewolves would break out of prison and attack, but that was changed.

There is no way to cage Mutant Blood.

That village is full of werewolfs and you need to grab them while they're human.

If you find a high quality werewolf during the night, then yes, your only option is to stalk them till day. Or if there's a risk they end up in combat (because they're roaming another area) then you can engage them in battle and just dodge.
Whether it's worth the time or not is only something you can judge, depends how badly you want Creature blood type.

Mutant Blood you can make with Mutant Rats from the Vermin Nest. But its random on the quality of Blood there's a pretty good chance of getting a high Quality one depending on how many Nest you build. Kill off the low quality ones and let the high quality ones set in a room away from Danger and Servants. The ones you Kill you can take the mats they drop crush the bones up and remake another sludge vial and try to get more High quality mutant rats.

Creature blood from Gracefall Village Kill off the Villagers that are low quality and hope another spawns with High quality blood

High Quality Mutant Blood can also create another Mutant with the Bite ability and has a possibility to create another High quality Mutant and you can Continue to chain it, depending on luck. But you'd have to fight alot when the Blood runs low to get a chance for another High quality Blood mutant.
