Well... have you obtained the ability to send servant missions out? The missions all want you to match a servant type symbol and a servant home region symbol to reduce difficulty and increase yield, respectively. How many of each servant type you want as servants from each region largely depends on that, though you can be suboptimal and send servants from one region to another region's missions without matching symbols.
What NPC you capture to be one of your servants depends mostly on whether you want them for their combat moveset or for their servant traits. I.e. matching mission symbols. Brutes and rogues and warrior blood types will all give you different servant trait symbols, so in that regard it really doesn't matter whether you capture a ♥♥♥♥♥♥ non-elite grunt warrior type or an elite warrior type. If you're going for combat moveset, however, you're probably trying to find very specific NPCs to capture rather than any ol' one of a given blood type.
Generally speaking, if you can build jails, I would try to capture any NPC of ~70-92%ish blood quality or above of an NPC model that I would want to convert into a servant eventually. 92% and above I earmark for gruel mutation to hopefully git em up to a 100%, and obviously natural 100%s you want to save for juice bags.
As for draculin-type servants, from what I can tell they all get the humble appearance trait, so it really doesn't matter which one you capture. And you only need a max of two.
