Its AoE is actually not to hard to avoid as there is space to move between the areas of damage (red circles) on the 2nd and 3rd rings and you can side step its charge.
But like all the bosses there are more ways than one to defeat them.
Rogue blood for movement speed was key to my strategy with a crossbow. I saved dodges and a single block for when he enrages as its a lot harder to dodge his normal attacks then - possibly impossible. I used frost bat as my spell choice because there is less of an opportunity to mistime it and get caught by a rush vs chaos bolt. Either would work though.
For the AOE the rogue blood helps you get into the spaces between the falling rocks and out of the zone faster and makes it easier to sidestep the rush attack if you were in the middle of a cast or crossbow attack..
If you want to be extra safe use veil of blood and blood rite as your dodge and block since both heal you a small amount.
Block attacks, this summons enemies, bear goes after enemy giving you a small window to do damage. Repeat. Between cooldowns you just need to be careful, limiting your use of dodge for only when absolutely necissary.
Here his ult is enrage which you have to time out. Get away from him fast as soon as he roars and dodge first hit with ability. Using chaos or illusion, you can dodge 2 attacks. 3rd is usually a charge which you sidestep, and the enrage ends as long as he had to run a bit to get to you.
As for normal attacks everyting can be dodged on foot. Bait his claw attacks - moving toward him then just back out of his range. Get creature or rouge blood for movespeed, dont try to get hits in mid bait.
When you see him prepare to charge move to the side and attack with ranged weapon/skill after. Keep camera pointed at him for easier time noticing hes about to charge.
The aoe attack you can also dodge on foot if not attacking.
In general try to dodge everyting on foot, and use movement skills for opening windows to attack, not to dodge to avoid damage. You should be concious of your resources so that he does not surprise you with ult with your pants (CDs) down. If he does, you tried to deal too much damage. Slow down next time.
As to what to use: chaos/illusion teleport, mace has dodge, spear is good dps. I think the basic counter skill pushes him back too.
You can get undead shield from Nicholaus (lvl37) which can do some nice distracting too. Or you can use horse (if it has good rotation and acceleration). Lots of possible strats.
Most important power of your vampire is the players ability to learn so start with skills like shield and practice dodging on foot or tanking abilities. Reset the fight when low, dont die.
You could also just... ignore it, its ability is very useful for starting out in Dunley farms but you can do without it too. Later it becomes an easier fight.

also to mention if u got the bearform u get rid of the garlic stacks twice as fast it could be rly helpfull later on cause of the resistance the bear gives u from itself
Besides clearing big rocks, its quite a bit faster to use bear while farming base materials. Its also useful for clearning decayed bases during day. If you are low on healing items bear also helps recover without draining good blood.
So yeah its situational, and depends on who you play with too. But for solo, especially if you are rushing to the end it can be very useful, just not directly.
if its still not working, go straight for bandit king and get iron weapons/armor first, makes it easy.
Chaos Barrier (for when he swipes or charges at you)
then either Veil of Chaos or Veil of Illusion (to dash twice when he is enraged)
Enter the cave, run past the bear, and up the ramp behind the bear.
Find the spot where the bear resets, and be careful not to pass that spot once you start the fight again.
From the top of the ramp, shoot the bear. Crossbow, spells, whatever. It will run up the ramp to bite your face. I recommend you don't let it get that close.
Hold shift to jump off the ledge to the left of the ramp, as seen from the top. Run to the far side of the cave, the bear will be chasing you. Continue to pew pew pew.
Now, use the shadow step to draw the bear's melee. As you pass by, resist the temptation to stab the bear with the spear, or else it will discover that your decoy is just a decoy and it will be all up in your koolaid.
Back up the ramp. Moar pew pew pew. Repeat until dead bear.
