So I installed the V Rising - Haunted Nights Castle Pack, and now? Where can I select or activat it in the game?

Certain items can be unlocked with the players progression. The player may not have certain crafting tables or crafting recipes unlocked yet.

Other things can be built using the build menu by pressing B, providing you have everythhing unlocked.

I thought it´s like a skin for everything and it changes all textures to those of the dlc?

It comes with wallpapers that you can use to cover you walls. The DLC does mention something about skins at the bottom but it is only mentioned once. I'm not sure what it's referring to with skins.
