Everything is easier with friends, family or strangers, obviously - but it's not required in this game, atleast i haven't faced something impossible whilst playing solo.
You can easily do this 2 people at your own pace, and if anything is a bit tough check the attack pattern of V bloods, and/or improve your gear before retrying. :)

So just to confirm, PvP is NOT required to play? Cause I am getting conflicting statements when googling the answer.
I'm unsure. I mean i don't believe it's a requirement. You should be able to play through the same clan in-game so collateral damage isn't happening. So even if PvP is enabled when you're starting up, you can just create the clan and play together through that, and the whole PvP concept dissapears since it'll just be the 2 of you, and no one else. :)
Above mentioned is assuming you'll play locally and not on an official server of course.

-PvP is optional. There's a setting to turn it on or off.
-When you boot the game and choose how to play, there's "Online" - "Private" - "Host dedicated". In your case, and for anyone just wanting to hop on when ever you feel like with 2 or 3 others, "Private" is your go to. Its for anything solo/small private party.
-There's 3 difficulty settings which you can tune and adjust at any time you feel like something is too easy or too difficult, and plenty of server settings for rates and such.
-And make a clan for who you want to play with so you can share your castles!
Hope the two of you get a phenomenal experience out of this game! It's plenty of fun how ever you decide to play it.
