Unless you can't do without PvP or company in general then solo is the best way to play the game. The land stays unspoiled and you can change your server options to have the game rules suite you.
Also there were reports of grieving by blocking off access to a players castle, but I think the devs done something to stop that, but yeah I would go solo, your not giving up anything.
Crafting and building are very good in VR, but the bosses you need to be ready for, don't rush in. Most of them have skills and patterns for you to get to know. It's really down to how you are with the combat, my reactions are not what they use to be so I struggle with some of the bosses.
You can absolutely play this game offline.
That said, doing my first solo brutal run (third run ever), I don't really find myself enjoying it as much. Which is odd given even when I didn't play solo, I tended to solo most, if not all the fights.
Most of my friends who played with me the previous times have opted to skip the 1.0 update for now, so I'm just gonna play through it clear for achievs, but I think I'd be having a lot more fun co-op than solo. The game is just a bit too generic-survival to be as enjoyable solo, even if the combat is well-made.
It’s a lot of fun for me solo, progress and pacing feels good.
I do wish they would add an option to link storage for crafting, but it’s manageable and you just need to consider placement a bit more with storage and stations
