Overall it doesn't take too many resources to outfit your castle and self. The real grind is outfitting your minions, who have the same gear requirements you do. Minions can generate resources, but generally can't get stuff from the same level zones without having equal gear for themselves. So they're mostly behind the curve, going out on hunts for lower level resources while the MC collects high level materials for them.
You pretty much need everything for everything, there's no vendor trash in V rising. That being said there are a few nice grabs:
- Buying fish with coins, for prisoners and fish oil
- Buying glass bottles with coins, 5 packs for cheap.
- Buying the unique weapons with copper coins, which can be shredded for silver coins.
- Upgrading weapons and amulets asap, buy the recipes if needed.
- Cultivating crops early and often
- Sending minions out on missions
That the bare bones of the game. You're grinding for researches for decorations / weapon upgrades / armor upgrades / and such.
Only thing what you can grind are scrolls, paper and schematics, other things are dropping, you will get enough of everything by normal playing.

Its not like MMO grinding where you repeat a dungeon over and over again to level up so you can grind the next dungeon. But it is still a grind
The resource demand climbs in multiplayer, where sieges and defenders are easily the most expensive assets.
I don't personally understand this since it really is just basic gameplay. It'd be like saying shooting someone on an FPS like Overwatch is a grind because you do it over and over. It's not a *grind* it's just the gameplay of the game.
As you've said, typically you just play the game and progression just happens really. There's no heavy grind on here even if you want to gear up servants. I geared up my servants to I think like 73 currently with only a few visits to places for resources.
It takes like one trip to the iron mine and you're set on iron for quite a while. Especially if you're using a good worker blood for increased yield. I can make one trip to practically anywhere for like 20 minutes and have more than enough to last me a while. I think the only thing I really have trouble with keeping a steady supply of is scourgestones.

Most other things are quite tame in terms of farming but scroll farming to unlock everything in iron tier is just plain torture.
I would say in comparison Valheim is way more grindy than this game with default settings tho.
