In short - three things matter:
Blood Quality - Affects additional bonus loot from hunts, the higher the better.
Faction - i.e. Bandits, Militia etc - Affects additional loot in particular region where they are from. This stacks with blood bonus (called Expertise).
Blood Type - Lowers expedition difficulty for particular location type.
Last one is the least important, since you can simply dress your servants in better gear, but first two directly affect the loot they'll bring back, which is the whole point of expeditions, so it's the only things that really matter for servants.
