And from the sound of it, you're not even on Brutal.
If you're on Normal this fight is autopilot win with high blood %, all 3 potion buffs, top tier jewels and max gear.
Just spam healing potions every time he doesn't do the usual ground waves.
If you still feel lost, either study him on Youtube, or search for other threads "Adam" in this forum, I've got 2 videos on Brutal.
This is just ♥♥♥♥♥♥♥♥♥. The boss is overtuned and the OP is right. Even on "Relaxed" difficulty, the boss is next to impossible solo.
If the boss is intended to be tackled with a group, FINE. Make it known to be so, and take him out of solo mode.
Otherwise, even with maxed/optimized weapon/gear/blood synergies, 100% blood, and full potion buffs (AND ALL PASSIVES UNLOCKED FFS), it is absolutely ♥♥♥♥♥♥♥ absurd.
And, on top of that....
The guy is complaining about WoW-style boss mechanic-♥♥♥♥♥♥♥♥ and you TELL HIM TO STUDY THE ♥♥♥♥♥♥♥ BOSS.

With so many attempts you should have understood how to answer all his attacks to go unpunished but it seems you dont learn much.
Use your spell and weapon options to simply counter the boss and make the fight easy.
If I can't walk into this fight and deal with it as I have _LITERALLY EVERY SINGLE BOSS BEFORE HIM_ --- then something is wrong.
If I have to change my weapons/gear/spells to fight him... something is wrong.
It's a poorly designed, over-tuned boss fight.
I'm confident I can do him with whatever build you name on Relaxed on 1st try, and whatever build you name on Normal within 30 minutes at most.
That's the route the Devs took. Following WOW's raid boss design philosophy you need to know the fight *by heart*, before you do the fight yourself. Any deviation from the script results in failure, which makes it a job not fun. That's why you see people on Youtube do bosses frailed and 10 levels lower. It's all about counters, dashes and dancing around the abilities, while applying damage in-between.

I like hard games. I have 100% achievements on every single Dark Souls game to come out since they've been on PC.
This boss is ♥♥♥♥♥♥♥♥. Poorly designed garbage.
this is legitimately a skill issue, the boss is doable as-is, you should EXPECT boss difficulty to increase as you progress through a game and the bosses require a more in depth understanding of mechanics and abilities
complaining that you need to be running an "optimized loadout" and that you can't just run the exact same kit you ran for every other boss in the game is very telling... you need to adapt and use a different build, ensure your gear is up to snuff
thinking you should just be able to face-slam a boss without needing to learn its moves or patterns in a game like this is very, VERY telling, and not in a good way... if you've really 100% beaten Dark Souls like you claim this should be one of the most rudimentary things about boss design for you, and yet you act like it's an impossible task so I simply cannot believe that you actually earned those achievements like you claim
Yes, we've had a fair share of people complain really loud in this forum that just because they've beaten Dark Souls they feel either qualified or entitled to be good judges of a game's balance.
But this is a very different game with very different mechanics.
When Michael Jordan switched to baseball I never heard him complain he's not being given wins just because he's a basketball champion.
Yet here you are, using being good at one game to demand changes in a completely different game.
Overtuned.
This is bad game dev.
