Since you can choose what weapons and spells to use, you decide how you want to play. For example, if you want to stay at range you could use a crossbow/pistols, and a pair of long-range spells and a long-range ultimate with a dodge that leaves a clone behind to distract enemies.
Or if you wanted to be a brawler, you could use axes and spells that give attack speed increases and provide barriers, and a dodge that electrocutes enemies so they take extra damage when attacked.
Or maybe you need a more defensive setup, where your dodge allows you to leech life from the enemies, and you have 2 barrier spells you can alternate to negate and reflect damage back at your foes.
So there isn't a class to choose and devote yourself to, but you have full control to be whatever you want to be.
You can use like 6 or 7 main weapons:
Dual pistols
great sword
mace/club
sword
spear
axes
reaper
Each one of these has 2 abilities then you have 2 vampire powers and an "ultimate" ability.. and there are a good.. 20-50 abilities and like 4 or 5 ultimates to chose from (you unlock these as you kill V-Blood bosses.
So for me I like the Reaper and then I use a chaos ability and an unholy ability that both do AOE.
I'd recommend watching some videos maybe?
So there is build variety, and it's based on gear. The positive of this is that it's pretty easy to change up your build over time. The downside of this means that some of it is RNG based and is determined by what spells you have unlocked. That said the latter is something they seem to want to change in that you have more control of what spells you can learn and when as you progress, so it isn't waiting until later levels to unlock more of a school you like as it is now.
In short, it's got variety, and I think if you like to switch up your playstyle or try new things this game will work well with that. But as it is magic is more of a supplemental thing to a build rather than a full build itself.
