Or if you know it's coming, use a ward spell or counter spell, which negates them and could deal damage to the boss, turning his attack into your gain.
Sometimes I don't know it's coming, either. It's easy to miss a single attack when the boss is surrounded by like 10 skeletons and there are already a ton of particles on the field from spells.
It gets worse on the bosses in the later end. It's dumb as ♥♥♥♥ that when you take damage, the max HP you can heal back up to is limited. I just soloed my way through the last boss, and Adam the firstborn was the only exception to my solo journey. I tried 40+ times and couldn't get him killed until I had others help me. You could be at 100% hp through 90% of the fight, but if you get grabbed wrong or move into one of their "specialty" moves, you're instantly roasted with no chance to come back because your max hp you can heal up to is so low. But to be honest, if it weren't for those mechanics, the game would be even faster to complete and all you'd have is a dead game 24/7. At least it keeps people playing longer after new content releases, the game pop imo will be dead again soon just like it was the first time.
Solaire puts it better than I ever would.

I do identify with getting suddenly clobbered over the head. Maybe it's the Dark Souls player in me but dying to a fight because you didn't understand how to avoid death is okay! I'm confident you'll find a flow to the fight that leaves you feeling rewarded by how you've played against him :)
Yeah, am a bit of a ♥♥♥♥♥. :D
Yeah tristan is where you really need to start managing your veil properly. >//<
