If you are referring to the progression and stuff being locked behind bosses there is no way to get rid of that. Literally the entire point of the game beat bosses, unlock stuff advance the game.
Build the castle, build the walls, build a sawmill, build a crafting table.
It seems like an endless tutorial.
I do not think you can turn it off. It is stuff you will naturally do at some point anyways. You can kind of ignore it if you really want to and do your own thing.
Eventually you will have to do the journal stuff, but you still have more freedom than you do in a lot of games.
i do wish we could hide them with a toggle to free up the screen.
