You'll notice that this doesn't happen when you try to mount from the side or back of the horse. Only when you are facing it and in front of the horse.
So in that case, don't hold down any movement key for a moment.
It's a bit of muscle memory to get over, but possible.
You probably mounted it from the front 180degree arc.
Meaning you were on the side but slightly towards the front and you were holding a movement key.
If you are on the back 180 degrees of the horse it never happens. Try testing it in your castle a bit.
When enemies are after you when on foot or if they knocked you off your horse, mount and cause the walkback to make them miss their attack then speed off to escape.
