And even without that killing bosses is extremely rewarding anyway. They give you new skills or unlock important progression stuff for crafting.
Compared to other games the enemy variety in this one is pretty good especially for early access.
- Many hats are super rare drop that can be dropped by enemies/bosses.
- Many bosses actually gives you their weapons when you first defeats them. It's not a drop, but it's still their weapon with their animations.
You get the crossbow from Rufus who's using it against you.
You get the pistols from Jade who's using them against you.
You get the Reaper (Scythe) from Kriig who's using it against you.
You get the Slashers from Bane which, while he doesn't exactly use the Slashers, it's still allows you to dual-weld blades like he does.
You get the Greatsword from Tristan who's using it against you.
Bandits and chests in the Woodlands camps have a chance to drop/give the Lumberjack's Axe.
Bandits in the mines / stone carry have a chance of dropping the Miner's Mace.

Bosses and rare elite mobs also have a low chance to drop Shattered weapons which are basically legendary weapons that requires you to restore them to use them. (Those are end-game weapons with random bonus stats.)
As other has mentioned, it's possible to adjust the enemies and player's stats, but it's a per-server setting. You adjust the mobs' stats separately from the V-Blood (bosses) stats so if you want to make the bosses meaningful and the mobs appearing less of a pain, you could buff the bosses HP to something like 5.00x, keep their damage to 1.00x (or higher if you want the challenge) and set the mobs HP to a low value so that you can just kill them easily as they come into your fight. (This would result in some bosses who are using mobs as their "meat shield" or "attack wave" to be a lot easier though.)
Remember that the servers you join, when playing online, have various stats so the experience you live through might differ from the experience someone else might experience on a different server. The same apply when you look up at videos online explaining stuff.
For example, you can set the HP/Damages/Spell values and the Mobs/V-Blood HP/Damages value multipliers to make the game a lot more alike to a game like Diablo where mobs are easily dispatched while Unique/Bosses are damage sponges that can hurt a lot.
