You need to be an A.I. yourself in order to beat some of the bosses in V Rising.
It's pretty ridiculous.

With Rogue 100% his Shockwave attack can even be outwalked (Especially if you get further move speed boost with Slashers E).
One thing to note is that you have +% Elude duration on your Travel skill (I recommend Veil of Blood), it makes sense to instead jump INTO the shockwave epicenter, since it's SAFE after the fist hits and you can rely on i-frames from the Veil.
To avoid the "Glowing fist" attack it's easy to strafe Left-Right-Left, always in that order.
If you become skilled enough you can add fancy moves on top of that like combat skills with i-frames to dodge the attacks (e.g. timing Slashers Q to dodge the dash or the jump and deal damage at the same time)
If you do use Blood Rite, remember that Immaterial means you can ignore collision of the models and walk through enemies, but it does not block AoE attacks (Jump and Shockwave).

I don't recommend melee to new players though, 1 shield/block type skill + Chaos Volley would make it easier to quickly gun down the Phantom (which is the biggest obstacle to winning). With both spells being blockers you would want to properly time them (as seen in the video above) to deal with the Phantom efficiently.
The Phantom is always the main target once it comes into play, unless the main body is very low enough that you can finish it in less than 10 seconds.
You don't have to tell us you're having a hard time using the options the game gives you.
