Servant Hunt Timer
I really dont get how it works.

Before, during its release. You need to be on the whole duration in game to get the rewards from your servant. Now I came back since there was a new expansion update. I can now safely logged out and close my PC and the timer will still run, and my servant will finish its hunt while im actually asleep, tho, thats by chance. most of the time, the timer wont even run after logging out of the game.

1 out 5 times i log out to check, that the hunt timer ticks down when im out.

I wonder if someone can answer what do you really need to do in order for the timer to work properly when youre logged out of the game

I can´t really answer that, but it makes perfect sense for you to be able to go offline and let your servants do their thing on a dedicated server that runs 24/7, especially if those last a long time. If it was not possible at launch, I would assume that was either a bug, an oversight, or a design error.

On the other hand, if you are hosting, then of course your servants will stop doing anything the moment you log off, because the server goes down then.

I've not seen that issue, and I've been sending them out on missions daily for a few weeks now. The timer should be running while you're logged out, i.e. presumably working by reading your system clock and comparing the time vs. the time you initiated the mission. Unless you're closing the game in some wacky way, I can't think of what would cause the mission timer to not run correctly like you're describing.

You might want to post this issue through their suggested bug reporting channels, and ideally try to reproduce what's causing it.
