If it's just for missions, then you focus on getting a variety of servants from different locations so you can match the mission type and get bonus resources by using servants from the same area.
If it's for PvP, you want servants that are strong fighters. Servants use the same weapons and abilities that they used before they were dominated, so get ones that are hard to kill, deal a lot of damage, or constantly heal their allies.
Servants do nothing to aid with crafting.
So, I guess villager servants wouldn't fight at all when somebody came trying to invade my castle? Or would they spawn pitchforks or something like their naturally armed counterparts?
They're the source of the Humble Appearance trait, which is helpful for running certain missions. You'll likely want to check your mission table, i.e. throne, to see how many villager servants from a particular region you're likely to want, and what gear level you're likely to need for them.
Are they powerful in combat? I doubt it, but then that's not their job. Their job is going into mission areas and bringing back fat stacks of resources.
