Otherwise, try Rogue blood. Really good rogue blood will give your travel skill reduced cooldown time, so you can dash out of trouble more often.
Other than that, try learning some positioning. It's the way that everyone beats this game without exception. You need to be good at positioning to get hits in and dodge hits. If you can't dodge hits because you're inept, learn which hits are fine to tank, and learn which hits you need to tank.
Take Tristan the Vampire Hunter for example (SPOILER):
He uses a lot of fire. Fire does % damage, and ticks your health bar down quite hard if you don't have fire resistance potions. He also uses a dash and a silver blade (unsure if it does silver damage, but regardless), you're meant to dodge the fire hits above all. His crossbow has fire, he throws fire bombs, and his sword can inflict fire damage with a really easy to dodge attack, simply side step his blade, it goes down straight. You 'can' tank the other hits just fine, to a point.
If this does not help you, at all, and you're waiting for Blood Moons with Scholar V Blood, and you're stuck in Dunley Farmlands on some of the bosses, consider uninstalling the game and re-evaluating your life choices if you wish to claim you're good at games, because you're not. This game is easy, once you learn it, just like every other game.
edit: sidenote, if you're trying to roleplay a character and only use certain abilities, you need to be good at the game too. If you're not, don't try roleplaying, and consider swapping out your spells to help you in certain fights, it's what they're there for.
consider taking some shielding abilities, and rely on a crossbow to deal your damage for you. this is not a catch-all mind you, certain attacks will go right through actual shield spells, but spells that give your healthbar a shield would be good for those hits if you can't dodge them.
The intention of this post is not to insult you (too much) but rather to help you. I would assume you know all of these things mentioned above, but incase you didn't, I outlined the best blood for your issue (scholar) as well as budget blood (rogue) if you can't find scholar blood. It is exceptionally frustrating however, to watch someone who is either inept at video games in general, or just simply does not understand how the game works, complain about the game's mechanics when 'millions' have done it before you, some even less equipped to deal with situations than you are.

This game does have many legitimate problems, but if you want to focus a thread on those problems, maybe don't open the thread with an OP like THAT. People will take you as someone who doesn't know how to play games, period.
There's a multitude of problems. Scroll and Schematic crafting. Gear levels. Fishing mechanics. Items clipping through objects and not being obtainable. Bosses breaking when a teammate dies and not moving but instead facing your dead teammate 24/7 while you hit them, etc.
The cooldowns are not a problem. If you don't like them, then that's a damn shame.

No tricks, no glitches, no running around rocks, no help from neutral monsters, no blood moon, only 30% blood.

Played on an official server, so no cheating involved.
The only real 'boss cheez' mechanic I personally find annoying is the call-in-reinforcements over and over, but nothing than cannot be overcome.
As an aside I have never found myself 'standing completely helpless' as I can always run around and poke stuff with my pointy things.
And why would you post clips of bosses you can 'beat naked with a dead fish' and not ones that better reflect your original concerns about long skill CDs?
You are either lying or you haven't played the game.
Your abilities have cooldowns. NPCs do not. It is quite common for fire archers to blanket the entire map in fires as far as the eye can see, and you only get 1 dash and 2 other abilities. Once those abilities are gone, you are stuck in slow motion with no way of fighting back. And you cannot chase them since they are faster than you and the won't stop moving until you stop chasing. And that's just the normal fire archers, boss mechanics later in the game are far more cheep and nasty. They will hit you with 5 stuns back to back+disables and then never-ending AOEs that cover the entire arena and even extend far outside the arena.
So how can you claim you have never been disabled? You have never _not_ had dash at the ready, you have never had your abilities all on cooldown? You can always run around and poke things? Not when all the enemies are faster than you, and they don't have to worry about cooldowns, and they can hit you with slows, stuns, and disables. You must be playing Mario Party.
I posted video of basically all my gameplay aside from some boring farming/building parts, up until that server was shutdown.
