You might want to touch on refinement time, make it 2~2.5x shorter.
You might want to touch on damage done to resource objects too, 2x or so.
I wouldn't touch any of the combat difficulty settings, they feel fair.
You might want to touch on territory size per castle heart level, so you can spend time building a really awesome castle with as few limitations as possible.
If you're an experience player, you might want to get the journal mostly done except the last 2~3 steps.
That's about what my own settings look like for single player playthroughs. Hope this helps.

Refinement Speed 3x
Damage to Resource Object 2x
Gathering From Resource 3x
Servant conversion timer 5x
Servant gathering 2x (since you can't adjust the time)
Servants per castle heart 5,7,9,11 (This just helps with the grind) - not 100% necessary.
Combat and health and all that seem pretty balanced. You could possibly reduce castle heart and personal blood drain to .50% if you don't want to hassle with those all the time.
It is a gamble right I mean what some of us find a chore other like? So I mean. Hopefully you are able to find a happy medium for yourself.
Also if you haven't gotten it.. the camera mod is incredible.. I definitely will never play the game again without it.
I would like to add, increasing border tiles on castle heart levels, so that you reach 250 at tier 3 instead of tier 4. In my experience youre mostly done building everything, anyways, when you upgrade to tier 4.
