how am i meant to get my first exquisite hearts? im level 58 and all the guides are saying to go kill level 68 enemies?

I don't know what level the paladins are, but they can be rather easily isolated and dealt with. I find the Knights and Lightbringers more trouble than pallies.

Another option is to tackle Jade.

And ultimately, killing Jade isn't that difficult. Then you get the recipe and Exquisite Hearts become just another heart drop.
