If it were too easy to refill on high-quality blood it would diminish the gameplay loop of finding different/better blood types, similar to the extremely common problem of survival crafters where at a certain point, food becomes a complete non-issue and may as well not exist as a mechanic.
You'll get the recipe for prison cells into T2 (Iron) after killing a certain V Blood.
The servant coffin and the prison cell are different. You want to put some high % blood types (5 different ones are capturable) in the prison cells. Then, you can bottle their blood to carry around. You have to heal them and fix their misery with certain fish. You'll see these options when you click on the prison cell that has a prisoner in it.
Prisons are unlocked by beating Vincent the Frostbringer. You can dominate a human and put them in the prison. Then you can drain their blood or obtain blood essence from them, which harms them and increases misery. Misery increases how much damage the draining process deals, so be careful not to let it get too high or you could end up one-shotting your prisoner. Feed your prisoners specific meals to heal them and reduce their misery. There are also prison floors that can help reduce the harmful effects caused by draining.
Actually, mobs can wander in if your castle isn't sealed. It's not a huge deal though. You can use 'servant lock' doors to keep any servants from opening the doors, otherwise they will leave them open a lot.
