If you just want to learn the basics and reroll on a new server, it doesn't really matter. With online official servers, you get the benefit of talking in a Global chat, and getting help from randoms that happen to be passing by. I've had 2-3 really difficult bosses I was having trouble with taken care of when another play came up to do the same one.
Plus on an official server, time passes when you sign off. So you can queue up a lot of stuff in your crafting tables, and have it complete when you sign back on. If you made an offline private server, the world stops when you quit, so it could slow things down a tad for you.
