You can get to at least ~35 gear level, just need to collect some research books with "merciless" variants of your current gear (they drop randomly from previous bosses/chests/even mobs AFAIK). But yeah, I'm kinda in the same place and the game gets noticeably slower at this point, at least until you can get iron weapons + new armor (I hope).
You can already skip content by beating bosses. Gating the servants and building behind a long tutorial is a bad idea and terrible for replayablity.
Where did I say build anything anytime? I simply said the current progression gating is not fun, and makes replaying extremely painful.

i go a couple of ingame nights into the bandit camps for the paper and turn them into recepies on the research table and hunt down the low level bosses again because their higher drop chance for books. its not that grindy.
The biggest thing that will help new players is to not build your castle right at the entrance but go much muh further north before building.
i mean i have the best "what i can craft" not the best in this game ^^ should have stated that better. and i found the dude i needed to kill for iron ingots and sort, was not even looking, just by exploring. so i have iron ingots now.
