In the end it all depends on how much patience you have and how easily frustrated you get. I do think hard core is more rewarding and goes better with the tense atmosphere but you do die pretty fast, almost instantly if caught at close range.
Saving isn't actually all that restrictive on hard core because the game auto-saves every time you transition between areas and beds are pretty easy to access. You can save anytime by just resting for 1 hour at a cost of 50 energy, you don't actually have to eat when resting despite the game pushing you to do so.
Stealth is very helpful on HC too.
About the professions, if I may you must focus your build on melee and stealth, mainly to face the early game with poor weapons. I've been playing as bulgar, which is strong on both melee and stealth.
I'm gonna do dead zone next. I've finished nightmare from scratch and got the unscathed achievement. That damn fast radioactive wolf, the screaming ghoul and the jax like ground smashing scythe, I've only used rifle on them. I'll gonna try that RPG weapon soon.
