This is very much akin to those problems where your menu is larger than what you can prepare in advance, such as having four soup recipes but only three pots to store them in. Freezers can store pots overnights, and the (cooking) pot stash will refill back to full regardless, so you end up with four pots instead of three the next day.
The freezer is a life saver in this case, and as stated you should go for it instead of wasting 120🪙 on the extra baking tray. Also having multiple recipes for cake gives you more trays for different flavours (at the expense of +15% customers...)
Don't bother relying on the random blueprints each day, it will not appear until day 7, and even then it's a very low chance you get a freezer from it.
Instead, researching a counter gives you 50% chance of getting a freezer from it (or chopping board), so you can either choose to research it right away and make it harder to get the research/copying/whatever setup down the line, or hold off from choosing recipes that add different flavours until you have the research/copying desks so you can clone multiple freezers and stockpile cheap trays, and much more.
If you already got a new flavour at day 4, then you'll likely have to give up trying to save up for copying desk and go get a freezer instead.
Cookie trays are possible blueprints.
Empty the tray as quickly as you can and reuse it on the next flavor. Prep stations and portioners help.
Get a recipe like donuts, which are flavored individually instead of collectively.
Part of the fun (and headache) is finding a solution with the tools you have. Cloning the tray with a freezer is a good idea, but it's only one solution among many.
Also unless you get coffee flavour or somehow have the right setup before getting a freezer or extra tray, donuts (and cupcakes by extension) is a really bad pick to deal with having multiple flavours available, since you need to spend more time prepping and retrieving the appropriate toppings - the extra flexibility of donuts is not worth the extra time required to prep the toppings. Brownies would very likely be the better option since you can then delegate chocolate to brownies only, and then serve coffee / lemon cookies with the initial tray.
Of course the game will sometimes throw a curve ball at you, and you gotta work with what you got, but getting a freezer is very feasible and worth pursuing, and will more importantly save you from the +15% customers from extra recipes that will bite you in the ass later in the game.
In any case, you can argue which solutions are better than others all you want, but at the end of the day, what you HAVE is a lot more important than what you WANT.
