If you're playing on two different devices, you can try steam's remote play feature. This essentially simulates being on the same device, though it requires pretty fast internet since you're streaming the game between the devices.
You can also each make a profile to track your respective progress. This is helpful if one of you decides to play solo a bit.
since there appears to be no online matchmaking at all (unless i am missing something)
Also the game has probably one of the most advanced co-op conectivity, you can mix local, online and remote play in anyway you want. Its even possible that you as the host add 1 more player locally than invite a friend online who than adds one more player locally on his side.
