The fun that i have in this game is bringing utility to the raid, and by far Artist for me is the most fun in that regard because of her multi-cleanse portal and on-demand heals that you drop on the ground for 60s and the dps classes on your party decides when they take those heal balls, usually Paladin is better than Artist for giving more damage to the raid because his buffs are easier to use but his heals are not good on critical situations because they are mostly overtime.
Since you like playing as a tank and dps on other MMO's the best recomendation i can give you is Lone Knight Gunlancer, altought he is a bit hard because his dash is backwards, he just like sup classes is preferred on raids because of his multiples utilityes, he is tankier than the majority of other dps classes, has a taunt that affect some bosses, can gives shields to the party, and is probably the dps class that faces the least ammount of gatekeeping, since you will be playing Red Gunlancer(Lone Knight) you will have enought swiftness to run fast and have an easier time doing mecs, homewer i don't recommend this class for using the story express, this class is good and fun for me on group content, on solo content its a unfun class in my opinion, playing the leveling story-line with this class was a pain.
You can play Sorc late-on once you have enought experience in raids, you have 6 free slots for characters on each server(i recommend playing on only one server), after you have like 2-3 sups chars and generates a good gold income weekly you can create a well-build Igniter Sorc and do big-numbas, i don't recommend creating DPS right away because the legion raids on Lost Ark are VERY HARD! and the majority of veterans don't have patience to wipe for hours with new players(sups are easier to get carried), unfortunately LA market is not in a good spot for new/casual players starting with a DPS class, my recomendation takes into consideration the costs of builds for new players and Artist and Paladin can build 4x3 engravings and do endgame content fine, while for DPS 5x3 engravings are mandatory and even with that you will face gatekeep if you have low roster level, sometimes i face gatekeep even with 5x3+1 engravings on my DPS because both roster level and "it's a non-meta class", with sup class like Artist or Paladin you won't face these silly problems.
Soul Eater is good for new players actually, its a non-positional Hit Master class which means you don't need to be sniffing the boss butts all the time like the Entropy classes, but the problem will be her build price, since its a new class it will be costly to build 5x3 on her, you can use a future hyper express on her thought, in the next 3 months there will be probably another one.
Also another thing before starting: don't underestimate lifeskills, these will help you to increase your item level on endgame, and Lost Ark is a game about patience and consistency on farm.
i REAAAAAALLY dont recommend sorcs tho, in this game sorcs are extremely expensive and imo its not worthy to build any spec class until you have some gold income to be able to pay for her accs, for example, i built my evo scouter, he is a spec based transformation class, just one of my accs was 80k g, imo if you are stil looking for DPSers, the swift based ones are the most cheap and the easiest ones to play at the moment
nothing is complicated for any class until endgame. then its too complex.
Finally! someone else mentioning deadeye pistoleer!
last time i recommended this class on these discussions i was accused of being some sort of mastermind wanting to control end game auction house for materials and gear...
DE pistoleer has become my main alt, very mobile, very fun, they are meant to be squishy but with your hyper mobility getting hit by stuff does not happen often when you learn a raid.
they are fairly brain dead, in terms of theres no real rotation just need to time your judge / conviction skills together, rest of the time your just dancing round the boss firing guns :D
cheap to gear, but expensive on gems, need lots of damage gems!
and most importantly, dont feel the need to be at the latest raid, doing the latest stuff... there will come a time when we are waiting 6-8 months for new content and you will catchup to everyone in the game with ease... enjoy what you can, take your time and dont compare yourself to other people or whales!
try and find a friendly guild / community on discord to play with, helps alot!

4. Reaper Hunger = most mobile class in the game but a bit squishy, also very fun
5. Scrapper Taijutsu = also getting reworked
if your looking for pure DPS and a more mechanical class then Death Blade or Deadeye is the way.
Could also try Predator slayer, swift with mobility skills, and tanky!
None of those classes are easy to play, you listed back attack classes that have gauge etc management other than SF which requires managing Hype which requires full knowledge of a fight and understanding your parties dps and how fast you are pushing for example
