It's always sad to fail a raid and see remaining hp : 2.1% and go damn
They can't bail because they would lose their daily harvesting chance.
Whole team has to agree to end the fight to keep their daily.
But no one has ever said it's a good thing to hide HP, whether its in Monster Hunter or Lost Ark

Other fights are like this in a good group:
You push the boss to a specific HP bar and deal burst dmg to skip or shorten certain phases. The HP bar number is your guide to do stuff and when you can expect certain attacks.
In Guardian Raids, you can't do that, which introduces a complete different flow of combat. You can still do it in a pre-made group that plays the encounter over and over, just because you get a feeling for it. But in the end, it is just a feeling for it.
Does it matter for the western release? Nah. We are to bad for strategic plays. Even more true in pugs. But someday we might be on the same level.
