Let's say you are writing a wiki, an article or even talking to your friends and you mention the name "Neria", you will have to explain which Neria you are talking about, while in an alternate reality in which amazon would use the tavern owners real names in the menus instead of neria, such thing would not happen and the information or conversation would flow much better, you could save up to 10 caracteres of text because of a simple design choice.
Amazon should at least make the text in the menus change as soon as when the npc tells us their real name so it would be lore friendly to you lore hos:
"Oh the text changed! Now she has her real name in the menus because now our character knows it, ohh my goddddd it's the magic of lore coming together all over again, jesus is beautiful!!!"

And yeah, all of them do have a real name. Neria in Prideholm tells you that hers is Canna right after you save her from the demon invasion in Prideholm.
